It's
Cozy Food Friday!

Our heater went out, and while waiting for it to be prepared correctly, we were without heat for 3 days.
Needless to say, all I wanted was warm food. As I sit writing this, the heater has been fixed, and my house is toasty. I actually want something cold for dinner.

So, I'm sharing with you a recipe that can be served hot or cold, and as an entrée or a side dish.

CORN, TOMATO, AND ONION SALAD
(Cold Version)

Ingredients

2 ears of corn, shucked and sliced off the cob (can replace with frozen or canned)

1 pound cherry tomatoes, halved (any tomato will do, but for the hot version, grape or cherry tomatoes work better)

½ red onion, thinly diced (any onion you like can be used)

2 tablespoons fresh lime juice

2 tablespoons olive oil

½ teaspoon salt

1 clove of garlic, minced (optional)

¼ cup chopped parsley (cilantro or basil works, depends on your likes)

Directions

    Combine all of the salad ingredients (corn, cherry tomatoes, red onions) together.

    In a bowl, whisk together, lime juice, olive oil, salt, garlic and parsley. Pour over the salad.

    Season with a bit more salt, and black pepper, and/or a little of the chopped parsley. Serve the tomato corn salad with any protein you like or on its own. Enjoy!

   If you want to make a hot version, heat olive oil in a skillet, throw in your salad ingredients, and cook until it's a doneness you're happy with. 

  Let set for 2 minutes.

  Stir in your dressing.
