Hey it is me again and I am attempting to make Green Jello for St. Patrick's day, it is always a science experiment (mostly that goes wrong) when I attempt to make jello...My Irish Soda Bread and Scones, they are well far better and warmer welcomed at gatherings and get togethers...


Honestly along with doing very little over the next two Spring Break weeks I will be baking and enjoying a bit of my Irish Heritage...


One thing I always did when my boys were little is make sugar cookies in shamrock shapes, Irish Soda bread and some of my Drunken Raisin Scones. 

I shared my scones and recipe on one of my long neglected blogs back in 2013! So I thought I might share it with you all here today. 

Drunken Raisin Scones
Scone Base:
1/2 cup of lard (you can use butter, margarine or shortening but I used lard)
2 cups of flour
3 tsp baking powder
1/3 cup of milk
1 egg
3 tbsp sugar
Drunken Raisin Mixture:
1/4 cup of raisins
1/4 cup of whiskey
1/4 cup of water
1 tsp cinnamon
2 tsp sugar

Whiskey Icing Glaze
2 tbsp of reserved reduced whiskey mixture
1/4 cup of icing sugar
1/8 cup of milk

Pre-Heat oven to 400F

Method:
Drunken Raisin Mixture:
In a small saucepan place the raisins, whiskey, water, 2 tsp of sugar and 1 tsp of cinnamon. Bring to a bowl and turn down to simmer. This is to plump the raisins and infuse the Whiskey flavor. When the liquid is reduced by 1/2 turn off and set aside.
 Scone Base:
In a mixing bowl sift flour, 3 tbsp sugar and baking powder, cut your lard in small pieces and then blend by hand the lard into the flour mixture, until it resembles a bread crumb mixture.  Add your egg and milk, mix in by hand. Next remove 2 tbsp of liquid from your raisin and whiskey reduction. Set aside for your icing glaze. Add the remaining raisins and liquid to your scone batter and mix in. If you find your dough is to wet add a small amount of flour.

Once the raisins and whiskey are incorporated in the scone mix  move it to a cutting board and form a circle shape as shown in the photo above. Cut into 8 triangles and place on an cookie sheet. Bake in oven until the edges are golden brown.  Remove from oven and let cool slightly.



Whiskey Icing Glaze:
In a small bowl place the icing sugar, add your reserved mixture and milk. *If you find it too think thin with a bit of water and drip over your baked scones

  2. thank you for sharing your recipe. when our two kids lived at home, every march I would make green foods. except eggs. LOL the first time I made green scrambled eggs the kiddos were in first grade and third grade. I made green scrambled eggs, green ham (yup this is possible-just soak the ham over night in a green colored water-really does look kinda yucky though)and green apple juice. LOL I will never forget the look on their faces. Would have thought I was trying to poison them. Well they both got up and grabbed an apple and went off to school with out eating. Well that was a bust. LOL For their lunches I had already put little green dots on their sandwich bread and had made green cookies and I drew a green four leaf clover on their bananas along with a note (that I always had ready for their lunch boxes) that had a leprechaun on it. Yes I may have gone a little over board with these holidays but we all had fun.

    1. I love that you went all out for your kiddos! One of my favorite things to make myself when I was a kid was warming up a can of Campbell's Chicken Noodle Soup. I decided one day t hat blue soup would be fun. Kid brain wasn't thinking yellow soup and blue food coloring. Yup, green soup. Nope, I did not eat it. LOL
