another great cozy mystery!
Today's recipe comes from
DARK CHOCOLATE DEMISE
Book 7 in the Cupcake Bakery Mystery series
by Jenn McKinlay
The New York Times bestselling Cupcake Bakery Mysteries bake up sweet surprises, but as the series continues, Mel and Angie are in for a fresh batch of trouble…
Scottsdale, Arizona, may not be the liveliest place on earth, but it’s never been as dead as this. Hundreds of fans have gathered together for the first annual Old Town Zombie Walk, and Mel, Angie, and the Fairy Tale Cupcake crew are donning their best undead attire to sell some horror-themed desserts to the hungry hordes.
But the fun turns to fright when Mel finds a real dead body in a prop casket outside of the bakery’s truck—and the corpse looks alarmingly like a zombie of their own. Knowing that Joe, Angie’s brother and Mel’s former flame, has been working on a dangerous mob case, Mel worries that the murder is a hit gone wrong and that someone near and dear was the real target. To keep any of her friends from winding up six feet under, Mel will do whatever it takes to find a killer—no matter how scary things get...

I'm still reading
DARK CHOCOLATE DEMISE,
I'll have my review posted this weekend. So far, as with all the Cupcake Bakery Mystery series, it has been wonderful!
On to the recipe!
TIRAMISU CUPCAKES
A Delicate Sponge Cake Flavored with Coffee and Rum,
Topped with a Creamy Mascarpone and Whipped Topping
Ladyfinger Cupcakes
5 eggs, separated
2/3 cup sugar, plus 2 tablespoons
1 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking powder
Preheat oven to 400°.
Line a muffin tin with cupcake papers and set aside.
Using a small mixing bowl, beat egg whites on high until stiff peaks form. Add sugar (2 tablespoons) and continue beating until glossy.
In another bowl, mix remaining 2/3 cup of sugar and egg yolks. Fold half of the egg whites into the yolk mixture, then add in the flour, baking powder, and remaining egg whites.
Evenly distribute the batter into the cupcake liners to about 1/4 full. They will not rise to the top to leave room for the mascarpone topping.
Bake 8 minutes.
Makes 12.
Tiramisu Frosting
6 egg yolks
3/4 cup sugar
2/3 cup milk
1 1/2 cup heavy cream
1/2 teaspoon vanilla extract
1 pound mascarpone cheese
1 cup strong black coffee, room temperature
2 tablespoon rum
1 tablespoon unsweetened cocoa powder
Using a medium saucepan, whisk together egg yolks and sugar. Add in milk and whisk over medium heat until mixture boils. Boil for one minute and then remove from heat.
Once the mixture has cooled, cover it and put it in the refrigerator.
After one hour, mix mascarpone cheese into the egg and milk mixture until smooth.
In another bowl, whip together cream and vanilla until stiff peaks form.
In small bowl, mix together the coffee and rum.
Pour 1 1/2 tablespoons of the coffee and rum mixture over cooled cupcakes and allow it to absorb into the cake.
Distribute the mascarpone mixture over the cupcakes, spreading evenly. Place a large dollop of the whipped cream over the mascarpone mixture and sprinkle with cocoa powder.
Refrigerate 3-5 hours until set.

"He looks really good in there," Angie DeLaura said. "Peaceful even."
"You can't say that about everyone," Melanie Cooper agreed.
"It's all about the casket," Tate Harper said. "You want to choose a lining that compliments your skin tone in the postmortem."

Mel nodded, still not really sure she was up to talking. The men who helped to lift ____ out of the coffin began to back the crowd up to make room for the other bicycle officers who arrived.
