Vidalia Onion Quiche
by Mary Kennedy

NIGHTMARES CAN BE MURDER
Book 1 in The Dream Club Mystery series

Ingredients
2 prepared 9 inch pie crusts, uncooked
1 large Vidalia onion
1 cup mayonnaise
4 eggs
1 cup milk
1 pound sharp cheddar cheese, grated
1 tablespoon cornstarch
black pepper to taste
Preheat oven to 375 degrees
Sauté onion in 1 tablespoon of oil or with cooking spray
Beat eggs and add mayonnaise, eggs, milk, cheese and cornstarch
Placed the sautéed onions into the pie shells
Pour the cheese and milk mixture into the pie shells
Bake for 35 minutes or until the top is brown and the quiche has set
(This quiche freezes well)
Yield: 8 servings

"You know I don't believe in dreams." How can I? I'm one of the small percentage of people who never dream. I fall into bed and it's total oblivion for the next eight hours. My brain powers down to sleep mode. No fragments of memories, no images, no dramatic storyline to analyze when I wake up. No dream content, period.
And I have to confess, I like it that way.

She was slightly breathless, and her face was flushed after rushing up the stairs from the shop. She sank into one of the ladderback chairs around the kitchen table and waved away the coffee and pastry.

DeleteI personally enjoy dreaming, although having my few sleeping hours completely empty and relaxing might be nice as well. I'm not that big of a quiche fan, but then I've never made one myself, only had my mother's, so maybe I should try it myself some time! Thanks for sharing :) I hope you have a great weekend!

DeleteThat quiche sounds fabulous! Unfortunately I'd need someone else to make it and just give me a piece because no one in my family would eat it and an entire quiche to myself doesn't sound like a good idea.

ReplyDeleteI have been craving quiche and Mary's recipe just spurred me on. I can make my pie crusts in advance and refrigerate them and since I cannot stand for more than a couple of minutes, I can cut up onions while sitting at the table, and measuring everything out, so my mind is made up to make two of these yummy Vidalia onion quiches this week. One question for Mary is that I am not sure about the flavor of the olive oil mayo that I have just opened now, so I think that I might chance using sour cream instead. I usually use half and half or light cream if not heavy cream not milk in my recipes, so perhaps the mayo makes up for milk and not cream. Will make a decision when the time comes I guess. I love asparagus quiche. Spinach quiche takes too long to make when I am in a hurry as I use the frozen chopped variety and you have to thaw it and then squeeze it dry, etc. so I used asparagus that I blanched lightly and cut it into small slanted pieces and it came out fabulous with cheddar as a bit of Asiago cheese in the quiche. I am so hungry right now........
