Cozy Food Friday!

Hello my friends! Does anyone else love breakfast? I have a recipe for you that ups the breakfast game! You'll want this one for lunch and dinner too!


TOMATO AND EGG EIDOLIC

Ingredients

  •  onion
  • ½ pound cherry tomatoes
  •  14.5 ounce can of crushed tomatoes
  • 4-6 eggs
  • 1 tsp onion powder
  • 1 tsp garlic powder
  •  tsp paprika
  • 1 smashed (almost to past) clove of garlic
  • bread to serve

Instructions

  1. Finely dice the onion
  2. Using a frying pan already pre-heated on medium high heat, add the onions and halved cherry tomatoes to the pan. Cook until onions have caramelized. (If you don't like the sweet taste of the onions done this way, only cook them until sweated and translucent.) 
  3. Season with salt and pepper (to taste), add the smashed garlic, paprika, onion powder, garlic powder. Mix well. Pour in the can of tomatoes. Stir the sauce until it boils and then lower the heat down to low.
  4. When the sauce stopped bubbling, crack and add the eggs. Cover with a lid and simmer for 15 min or until the egg whites no long translucent and egg yolk is still soft and runny (like sunny side up eggs).
  5. While waiting, toast up your favorite bread for dipping. 
  6. After removing from the stove, garnish your dish with chopped chives, parsley, grated cheese (no soft cheeses), crumbled bacon, all of the above or nothing at all.
