RANCH AND PARMESAN BREADED CHICKEN BREASTS
½ cup buttermilk ranch dressing
¼ cup mayo
4 boneless chicken breasts
¾ shredded Parmesan cheese
6 teaspoons dry bread crumbs (Italian seasoned work great)
Preheat oven to 425 degrees F.
Place ranch dressing, mayo and ½ cup cheese in a small bowl and stir well.
Lay chicken breasts on a baking sheet and spread dressing mixture evenly across the top of all.
Evenly sprinkle bread crumbs on each one.
Place in the oven and bake for 25 minutes or until your chicken is cooked thoroughly. (Poke with fork to see if juices run clear).
Tops will be browned.
Sprinkle remaining cheese over each piece.
Sprinkle a pinch of salt and pepper if you like (I don't use either)
