Cozy Food Friday

The featured recipe to day is mostly lover or hated by people. It gets a bad rep as well as some colorful names, that I believe are the military can be thanked for. 😉 I bring you the one and only . . .

CHIPPED BEEF GRAVY

Ingredients

8 ounces  pkg dried beef

¼ cup butter

¼ cup all purpose flour

½ teaspoon fresh ground black pepper

2 cups milk

pinch of salt (taste, adjust as needed)

Directions

   Melt butter in a skillet over medium low heat (a cast iron frying pan is best). 

   When butter is melted, add in the dried beef, cook until butter is dark, not burned. 

   Whisk in the flour briskly. Cook 3 mins while whisking continuously. 

   Sprinkle in black pepper. 

   Slowly whisk in the milk until smooth and creamy. 

   Bring it up to slow boiling, all the while using a flat tipped wooden spoon, or spatula to keep it from burning on the bottom and sides. Take off fire when the light boil starts.

   Salt and pepper to taste. Serve over toasted bread (My favorite way!), fried potatoes, or biscuits.

While chipped beef gravy, also know as dried beef gravy, and creamed chipped beef, is a breakfast food to many, it was always dinner in our house. I requested it every year for my birthday dinner. I even requested it last year (first time since my parents passed in 2005 and 2006), and my sister, Darlene did our mom and dad proud. It was sooooooo good!
