Cozy Food Friday

Winter is hanging on tight (yay!), and warm food is a great way to make us feel cozy. The following recipe is a perfect solution, and one that's great rather with as part of a meal or simply a snack on their own.

MINI CHEESY BACON 

MUFFIN PAN QUICHES

Ingredients

6 slices white bread (light wheat also works)

1 teaspoon oil

8 slices bacon (I use the precooked), finely chopped

½  Vidalia onion, finely chopped

1 clove of garlic, minced 

½ cup cheddar cheese, shredded 

½ Colby-jack 

4 eggs

½ cup whole milk 

Chives, as many or few as you'd like, diced finely, for garnish, optional

Directions

   Preheat oven to 350 degrees

   Spray a 24 hole mini muffin tin with cooking spray

   Mix bacon, onions, and garlic in a microwave safe bowl and heat for 45 seconds. Stir, and allow to cool 

   Cut crust off bread. Use a roller to flatten out bread. Cut each flattened slice into 4 pieces, insert one into each coated muffin pan round, press into the shape of a cup

   Place a small spoonful of bacon, onion, and garlic mixture into each hole

   Mix the two cheeses together and sprinkle over the bacon mixture

   Whisk milk and eggs together in a large measuring cup or bowl with spout 

   Pour egg mixture into pastry cups to just below the top (allowing room for egg mixture to rise)

   Bake for 12-15 minutes or until browned on top

   Remove from oven and sprinkle with chives, optional
