It's
Cozy Food Friday!

That means it's time to share a recipe from
another great a cozy mystery blogger! 😉

This week's recipe is from
Me!

SPAGHETTI CARCONARA WITH
BACON AND CHERRY TOMOATOES

Ingredients

1 pound box (dried) spaghetti noodles (you can substitute with fettuccine or linguine noodles)
1 tbsp olive oil
8 ounces lean bacon, chopped (turkey bacon works too)
1 pint cherry tomatoes (use as many or as few as you like)
4 eggs
4 tbsp light cream (whole milk works as well)
6 to 8 fresh basil leaves, hand torn in to small pieces
2 tbsp grated Parmesan cheese (you can use pre-packaged, but not the shaker stuff)
salt and pepper to taste (I can't eat pepper, so it's equally as good without it)

Directions

Bring a large saucepan of lightly salted water to a boil. Add the pasta, return to a boil, and cook for 8 - 10 minutes, or until noodles are firm but tender to bite

Meanwhile, heat the oil to a heavy bottom skillet. Add the bacon and cherry tomatoes and cook on medium heat until tomatoes start to pop open, stirring often

Beat the eggs with the cream or milk in a small bowl and season with salt and pepper to taste. Drain the pasta and return it to saucepan. Add the contents of the skillet, then add the egg and tomato mixture, half the Parmesan cheese, and half the basil. Stir well, then transfer to a serving dish. Sprinkle with the rest of the Parmesan cheese, and basil. Serve immediately.

This dish is just the thing to fight off the winter chills.
And, it's equally wonderful cold for a quick summertime meal.
Please let me know if you try it out!
