Foodie Friday Take Over!

Hello and Happy Friday, today I (Karen) am taking over for our dear friend Lisa who is taking a bit of time off due to illness. I am so excited to share a recipe I found that I have now made twice and it is the perfect NO BAKE bar to enjoy with your tea and a great read.

No Bake Chocolate *Peanut Butter and Oatmeal Bars
*If you have a peanut allergy you can use any nut butter or just substitute butter or margarine in yours. 
Ingredients: 
1 cup of butter
1/2 cup of packed brown sugar
3 cups of quick oats (I used one minute oats)
1 tsp. vanilla extract
Filling:
1 cup chocolate chips
1/2 cup *peanut butter
Method: In a medium sized sauce pan place the butter and brown sugar. Melt together, once combined add your vanilla and three cups of the oatmeal. Stir together until combined. 
In a greased bar pan, lay out half of your oat meal mixture. reserve the rest for the topping. Pat down the oatmeal mixture and set aside. 

Over medium heat place a small pot of water and a metal bowl on top, to create a double boiler. Place your chocolate chips and peanut butter in the bowl and stir together until melted and combined. Pour over the oatmeal mixture and spread out evenly. Top with remaining oatmeal and spread out. Cover with plastic wrap and place in the fridge for 2 hours to set. 
I cut mine while it was still cool but you can bring it up to room temp before you cut it. 


I cut these pretty small because they are so rich! Perfect bite-sized bliss!
