My friend and regular Lisa Ks Book Reviews follower, Kay Garrett, shared a cookie recipe with me that I just know you're going to love!

Ozark Honey Oatmeal Cookies
My all time favorite cookie has to be the Ozark Honey Oatmeal Cookie. My Mom made it and I’ve made them for years. What I like about them is that the older they get the better they get. They won’t dry out, have great flavor and freeze well. Great for that cookie you want to ship to someone since it takes all weather in stride and shows up just as good as when you made them. I’m always being asked for the recipe which I gladly share. ~ Kay Garrett
Ingredients:
1/2 cup Shortening
1 ¼ cup Sugar
2 Eggs
1/3 cup Honey
1 tsp. Salt
1 tsp. Soda
1 ¾ cup Flour, sifted
2 cups Quick Oats
1 cup Coconut
1 cup Pecans, finely chopped or ground
Directions:
Heat oven to 375 degrees
Mix shortening, sugar, eggs, honey, soda and salt thoroughly
Stir in flour, oats, coconut and pecans
Shape dough into rounded teaspoon sized balls
Place 2 inches apart on ungreased baking sheet
Flatten with bottom of a glass dipped into sugar
Bake 8 to 10 minutes or until lightly golden.
Immediately remove from baking sheet
Yields: 5 dozen cookies
Variations:
Honey-Raisin Cookies: Omit coconut and substitute 1 cup raisins
