The long-awaited wedding of Monica and Greg is the highlight of the harvest season in Cranberry Cove, drawing friends from far and wide to help them celebrate. On To The Recipe!
CRANBERRY APPLE CAKE

Ingredients
½ cup butter
1 cup sugar
2 eggs
1 cup applesauce (sweetened)
1-½ cups sifted flour
¾ teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon ground cloves
¼ teaspoon nutmeg
1 cup oatmeal (quick-cooking)
¾ cup whole-berry cranberry sauce
Preheat oven to 350 degrees

Directions
In a large bowl, cream butter and sugar until light and fluffy.
Add an egg and continue to beat until well combines. Add applesauce and mix well.
In another bowl, sift together flour, baking soda, cinnamon, cloves and nutmeg. Add to sugar, butter, egg and applesauce mixture and blend well.
Stir in oatmeal and cranberry sauce.
Pour into 9-inch square prepared pan and bake for 45 minutes.
The recipe may shout fall, but I think a nice cold slice from the fridge would be perfect on a hot summer day!
