That means it's time to share a recipe from 
another great cozy mystery!

This week's recipe is from
A SPOONFUL OF MURDER
Book 1 in the Soup Lover's Mysteries
by Connie Archer


Winter is big business in small-town Snowflake, Vermont. Tourists arrive to hit the ski slopes—and what could be more satisfying after a chilly day of carving powder than a steaming bowl of soup?

When Lucky Jamieson inherits her parents' soup shop, By the Spoonful, she realizes it's time to take stock of her life. Should she sell her parents' house or move in herself? Does she really want to run a restaurant business? And what about her grandfather Jack, who seems to be showing signs of Alzheimer's?

But her life decisions are moved to the back burner after an icy blonde tourist is found frozen to death behind the soup shop. and Lucky is bowled over when her soup chef, Sage DuBois, is led out of the kitchen by the police. As suspicion and speculations snowball, Lucky decides that the only way to save her employee and her business is to find out herself who iced the tourist--and landed her chef in the soup...

This book is an oldie, having been released August 7, 2012, but certainly a goodie. One of my all time favorite cozy series. 
If you haven't read it, you need to!

TOMATO SPINACH SOUP

Ingredients

2 cups of jumbo pasta shells
1 tablespoon olive oil
½ medium onion, coarsely chopped
1 clove garlic, chopped
1½ pounds of tomatoes (or substitute a 16-ounce can of crushed tomatoes)
6 carrots, peeled and chopped
3 cups frozen or fresh spinach
2 tablespoons of dried oregano
2 tablespoons of dried basil (fresh basil leaves are even tastier)
6 cups of vegetable broth
Salt and pepper to taste
½ cup grated Parmesan cheese

Directions

   Bring salted water to a boil in a large pot. Add 2 cups of jumbo pasta shells to the boiling water with a few drops of olive oil. Stir and lower heat slightly. When pasta is slightly al dente, drain and set aside.

   Sauté the onion and the garlic with the olive oil in a pot for 5 minutes, then add the tomatoes, carrots, spinach, oregano and basil. Add vegetable broth to the mixture. Bring to a boil, lower heat and simmer for 20 minutes. Ladle soup over the pasta shells and serve with great Parmesan cheese for garnish.

Those chilly nights are coming. They've actually arrived in many places. Can't you just imagine a hot bowl of this soup with some warmer, crusty bread?
