Cozy Food Friday
and time for another recipe!

This recipe is quick, easy and delicious!

ROASTED SMASHED RED POTATOES

Ingredients

2 pounds red potatoes, each about 2-inches
6 Tablespoons extra virgin olive oil
3 teaspoons minced fresh parsley
¼ cup finely shredded Parmesan cheese
2 teaspoons onion powder
2 teaspoons garlic powder
salt and pepper, to taste

Directions

   Bring potatoes to a boil over high heat. Season water with salt, about 2 teaspoons.

   Reduce heat to medium and cook until potatoes are fork tender.

   Preheat oven to 450 degrees near the end of potatoes boiling.

   Drain potatoes into a colander, let cool 5 – 10 minutes.

   Pat potatoes dry. Transfer to a large bowl. 4 tablespoons oil, onion powder, garlic powder, salt & pepper. Toss, and place on baking sheet.

   Using a non-slotted spatula (or whatever will work for you, smash potatoes to about ½ an inch thick. Drizzle 2 tablespoons oil over the top.

   Bake in preheated oven for 25 minutes or until potatoes are crisp on top.

  Remove from oven. Sprinkle with parmesan cheese, and parsley.
