QUICHE OF DEATH

GREER GOODER'S CHICKEN SALAD

Ingredients

2 large boneless, skinless chicken breasts cooked, chilled for a bit, and diced.
1 cup chopped celery
1½ cups halved seedless red grapes
2-3 green onions, chopped
1 cup mayonnaise
½ cup sour cream
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
½ teaspoon dried dill weed
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon sugar
½ teaspoon salt
½ teaspoon freshly ground black pepper
¼ cup sliced almonds

Preparation

   1. Place the diced chicken, celery, green onions and grapes in a large mixing bowl and stir to combine.

   2. In a separate bowl, stir together the remaining ingredients (except for the almonds) until well mixed. Pour the mixture over the chicken salad and stir, making sure the chicken in thoroughly coated. 

   3. Cover and chill for at least two hours. 

   4. Sprinkle a few almonds on the chicken salad just before serving.

   5. Greer serves her chicken salad on croissants, but you can us sandwich bread or wraps just as easily. Or of you're watching your carbs, it's also good on a bed of butter lettuce.

Hmmm, I have some leftover chicken in the fridge. Oh yeah, going to have chicken salad tonight!

Monique Bird grew up on an orchard in Payson, Utah. She had a favorite spot high in a cherry tree where she would sit, make up stories, and daydream.

I'm happy today to be spotlighting author
Judy Moore


Judy Moore is the author of the popular thriller, The Mother-in-Law, described by Kirkus Reviews as “A sharply written, suspenseful, domestic thriller.” She is also the author of three traditional mystery novels: Somebody in the Neighborhood, Murder in Vail, and Murder at the Country Club. 

Her latest book is a cozy mystery, A Book Signing to Die For, the first of three standalone cozy mysteries in the Beach Reads bookstore series. The second book, A Beach Wedding to Die For, will be released early this fall.
