Sally’s Decadent Blondies


When Sally Solari joins the chorus that her ex- (but best friend) Eric sings in, she’s delighted to discover that dessert is an integral part of each rehearsal. Proud of her rich and chewy blondies, she offers to whip up a batch for the chorus members.

(yield: one 9” x 13” pan)

Ingredients

½ lb. (2 sticks) unsalted butter, melted
2 cups brown sugar
2 eggs
2 teaspoons vanilla
½ teaspoon salt
2 cups flour
1 cup chopped macadamia nuts
1 cup white chocolate chips


Directions

Preheat oven to 350 degrees F, and butter or oil a 9” x 13” baking pan.

Pour the melted butter into a large bowl, add the brown sugar, and stir together until blended. Add eggs and vanilla and beat until smooth.


Add salt and flour and stir until no streaks of flour remain. Stir in mac nuts and white chocolate chips.


Dump batter into oiled pan and smooth with your spoon (it will be thick and gooey).


Bake until a toothpick inserted in the middle of the pan comes out relatively clean—about 25 minutes. (Err on the side of them being underdone; chewy blondies are ever so much better than dry ones!)

Let cool, then cut into squares. The blondies can be eaten right away, or covered tightly in plastic wrap and frozen for later use.


Oh my goodness. 
I can just imagine biting into one of these!
