Kristi has been obsessed with
popcorn since first tasting the caramel cashew popcorn at Garrett's in Chicago.
If you've never had it, you might want to hop on a plane and go now. Seriously,
it's that good.
Kristi lives in northern California, although
she was born in Ohio like the Rebecca, the heroine of the Popcorn Shop
Mysteries. She loves snack food, crocheting, her kids, and her man, not
necessarily in that order.

On to the recipe!
S'MORE POPCORN BARS

Graham cracker
crust:
1 1/2 c. Graham
cracker crumbs
6 T. butter,
melted
1/3 c.
sugar
Mix together
crumbs, sugar, and melted butter.
Press into a foil or parchment paper-lined 8x8
pan.
Back at 350 degrees for 7 minutes or until it starts to
brown.
Filling:
1 10 oz. package
chocolate chips
1 jar marshmallow
crème
3 cups popped
popcorn
Melt chocolate chips
in microwave or in a double-boiler. Pour over crust.
While the chocolate chip
layer is still warm, microwave the marshmallow crème for 30 seconds at 50%
power.
Watch closely so it doesn’t go full Vesuvius on you. Pour the crΓ¨me over
the chocolate chip layer.
Press the popped popcorn into the marshmallow layer.
Refrigerate for 30 minutes.
To serve, let
it come to room temperature, then cut into squares.
Just when you thought popcorn couldn't get better!
